The worm screw pushes the meat against the blade and plate assembly, and it is the edges of the blade sliding over the holes of the plate that make the cut. As the number rises, so does the diameter of the plate, and with it the kilos per hour the machine can move.<\/p>\n<p>The important point is that sizes are not interchangeable: a size 12 blade will not fit a size 22 mincer, or the other way round. Blade and plate must be the same number and, beyond that, must work as a matched pair.<\/p>\n<p>As a part in direct contact with food, the blade falls under Regulation (EC) No 1935\/2004 on materials intended to come into contact with food. It does not mean it never wears: there comes a point when it has to be replaced.<\/p>\n<h3>Should the blade and plate be changed together?<\/h3>\n<p>That is the recommendation. The two parts wear together and bed into each other; fitting a new blade against a worn plate leaves gaps where meat passes through uncut, and the result is pasty mince.<\/p>\n<h3>How do I know it needs changing?<\/h3>\n<p>By the result: the meat comes out crushed rather than cut, the machine jams more, takes longer, and the product comes out warm.
