Description

This stainless steel plate for size 32 mincers is supplied in hole diameters from 7 to 13 mm, the coarse mincing range. It is the fixed part the blade turns against, and its diameter determines the final texture of the product.

What it is used for

Coarse mincing keeps the fibre of the meat more intact, and you notice it when eating: the bite has texture and the product is not compacted. It is the diameter used when you want the grain to show, and also the one used as a first pass before a fine mince.

Coarse first, fine second: why two passes beat one

The most widespread practice in a preparation room is not choosing between coarse and fine, it is using both in order. Passing the meat first through a 7 to 13 mm plate and then through a 4 to 6 mm one gives a more even result than forcing it straight through the fine plate, and it is far easier on the cutting assembly and the motor.

The reason is mechanical. Asking a fine plate to reduce a whole piece in one go forces the worm screw to compress the meat against the metal, with more friction, more heat and more wear. With two passes, each stage removes only a little material and the product comes out colder, which is exactly what you want.

The plate is in direct contact with food and falls under Regulation (EC) No 1935/2004. Stainless steel meets what Regulation (EC) No 852/2004 requires of equipment: a smooth, non-absorbent, corrosion-resistant surface suitable for effective cleaning and disinfection. In the HACCP plan, cleaning the cutting assembly after each use is usually listed as a control, because the holes are where residue is most easily retained if the plate is not removed and washed separately.

Frequently asked questions

What is coarse mincing used for?

For preparations where you want the fibre to be distinguishable: visible-grain burgers, prepared products with a pronounced texture and certain sausages. Also as a first pass before fine mincing, which is its most common use in a preparation room.

What is the difference between 7 and 13 mm?

The size of the resulting grain. Within the coarse range, the smaller diameters give a grain that is still compact and the larger ones a clearly chopped texture. The choice depends on the particular product being made.

Can I use this plate on a size 22 mincer?

No. The size number defines the diameter of the cutting assembly and each machine takes only its own size. For size 22 we stock the 4 to 6 mm plate and its matching blade.

How do I know the plate is worn?

The edges of the holes lose their sharp arris and become rounded. From that point the meat is crushed rather than cut, the mince comes out pasty and the product tends to come out warmer than it should.

Can it be reground?

A specialist workshop can regrind the assembly, but each regrind removes material and reduces the thickness of the plate. There comes a point where it is no longer viable and replacement makes more sense, particularly if the assembly works daily.
