Description
The Tecnotrip EVT-7 chamber vacuum packing machine is a benchtop unit with a 430 x 440 x 190 mm chamber and a 21 m3/h pump, intended for points of sale with little space. It carries a 420 mm sealing bar on a stainless steel base, runs on 220 V single phase and is manufactured to EC standards.
What this machine is used for
Vacuum packing draws the air out of the pouch before sealing it, so the product is protected from the oxygen that accelerates oxidation and the growth of aerobic flora. The EVT-7 brings that process to the counter: it takes up little room, plugs into a normal socket and lets you pack on demand without depending on a production room.
- Butchery: packing steaks, chops and prepared portions to take away.
- Charcuterie: sliced product and cheese wedges ready for sale or for an order.
- Food shops: packing in front of the customer, with the machine on the counter.
- Small production rooms: portioning and keeping prepared product between services.
- Catering: preparing portions for sous vide cooking or for orderly freezing.

The machine, the pouch and the label
Vacuum packing is a step worth recording in the food safety plan. Regulation (EC) No 852/2004 on the hygiene of foodstuffs requires food business operators to apply procedures based on HACCP principles, and in practice packing is usually defined as the point where product temperature, equipment cleanliness and seal integrity are controlled.
Two levels are worth separating. The machine is built to EC standards and its base is stainless steel, a material suited to daily cleaning; but the material that touches the food is the pouch, which is subject to Regulation (EC) No 1935/2004 and Regulation (EU) No 10/2011 on plastic materials intended to come into contact with food. That is why it matters to use food grade vacuum pouches and to keep their documentation. Finally, vacuum extends shelf life but does not remove the labelling duty: Regulation (EU) No 1169/2011 requires the date of minimum durability or the use-by date on the packed product, along with the other mandatory particulars.

Frequently asked questions
What fits in the EVT-7 chamber?
The chamber measures 430 x 440 x 190 mm and the sealing bar is 420 mm, which is the dimension that limits usable pouch width. It takes trays and counter-sized portions; for long pieces such as cured loin or whole sausages a long chamber like the EVT-10 is the better fit.
Does it need a special electrical supply?
No. It runs on 220 V single phase at 0.75 kW, so it plugs into a normal socket. That is one reason it suits a retail point: it needs no three-phase supply and no dedicated panel, unlike the large chamber models.
What is double sealing?
Two parallel seal lines instead of one. The second acts as insurance: if the first has an imperfection from a fold in the pouch or a trace of fat, the other maintains the seal. With juicy or fatty product, that redundancy saves lost pouches.
How many pouches can I pack per minute?
The machine is rated at 2 to 3 cycles per minute. Real time depends on the vacuum level programmed and the volume of air to be extracted: a small, well-filled pouch runs faster than a large one with a lot of air. Setting those times properly is part of commissioning.
Can it stand on any counter?
It weighs 60 kg and measures 520 x 600 x 460 mm, so it needs a firm, well-supported surface, not a light shelf. Leave clear space behind and at the sides for pump ventilation and to open the lid comfortably.
What maintenance does a chamber machine need?
Three things, essentially: change the vacuum pump oil at the stated intervals, replace the PTFE tape and the sealing bar rubber when they start to mark, and keep an eye on the lid gasket, which is what guarantees the closure.
