Description
Vacuum pouches 250 x 500 mm are the long format within the wide range: 25 x 50 cm, in 90 micron gauge and packs of 100. Half a metre of depth means pieces that any other size would force you to cut down go in whole: boned hams, complete loins and long primal cuts.
What these pouches are used for
Cutting a piece so it fits the pouch costs presentation and often sale price. This size removes that compromise: at 500 mm deep it takes practically any long pork or beef cut without folding it, keeping the piece intact all the way to the customer.
- Charcuterie: whole boned hams and shoulders.
- Meat industry: loins and long primal cuts.
- Salted and cured products: cured pieces of real length.
- Fishmongers and smokehouses: large salmon fillets.
- Dispatch: packing complete pieces for distribution.

Why a whole piece keeps better
In a whole piece the exposed surface is proportionally smaller than in cut product, which favours keeping quality on its own. The vacuum adds the removal of oxygen, and the water vapour barrier of the film stops the piece continuing to lose weight inside the pouch, which matters particularly with cured products.

Frequently asked questions
Does a boned ham fit?
Yes, that is one of its main uses. The 500 mm depth leaves room for the piece and for the seal. Check the width as well: a boned and tied ham normally goes into 250 mm comfortably, but very thick pieces can end up tight.
Which machine takes this pouch?
One with a chamber of at least 500 mm usable depth. Floor-standing chamber machines and long-chamber benchtop models qualify; compact benchtop machines do not. This is the size in the whole range that most constrains the choice of machine.
Will it hold a heavy piece?
Polyamide and polyethylene film has good mechanical strength and carries pieces of several kilos without trouble. The sensitive point remains the seal: handle the pack by the body and never by pulling on the closure.
Can I pack a bone-in piece?
Not advisable at 90 micron. A bone punctures the film easily, above all during transport. For bone-in pieces, protect the bone beforehand or move up to a heavier gauge.
How long does the cycle take with a pouch this size?
Somewhat longer than with a small pouch, because there is more air volume to extract. On machines with a high-capacity pump the difference is minimal; on a small pump, the longer cycle is clearly noticeable.
Other pouch sizes
- Vacuum pouches 250 x 400 mm: same width, 10 cm less depth.
- Vacuum pouches 350 x 500 mm: same depth with far more width, for bulky pieces.
- Vacuum pouches 140 x 450 mm: long but narrow, for thin-calibre pieces.
- Heavy-duty vacuum pouches 150 micron 350 x 550 mm: the largest size, in reinforced gauge.
