Description

The Arcos 28 cm cleaver with red handle is designed for professionals with prolonged use: NITRUM stainless steel and ergonomic injected polypropylene handle, non-slip, heat resistant from 120 to 130 °C and permanently joined to the blade by injection.

What it is for

At 28 cm, this cleaver adds reach and inertia compared with the 26 cm model, which helps with large racks and beef cuts, where the bone is thicker and the blow must land with more energy. It is the processing-room size, for those who portion chops regularly and not just occasionally.

Bone splinters and foreign body control

Any bone cut by impact generates fragments, and those splinters are a recognised physical hazard in any self-control plan. Two practices reduce the problem: keeping the edge in good condition —a blade that bounces splinters more than one that goes in— and checking the cut surface before packing or presenting the piece.

Control of physical hazards is part of the HACCP system required by Regulation (EC) 852/2004, and cleaning of utensils and surfaces is among its prerequisites. For high volumes of chops, the band saw gives a cleaner cut with fewer splinters than a blow.

Frequently asked questions

Why choose 28 cm instead of 26?

For reach and inertia. A longer blade reaches wide racks better and the blow goes into thick bone with more energy. In exchange it requires a little more working space and a firm support surface.

What surface should be used?

A butcher’s block or a thick polyethylene board, stable and at the right height. Striking on a thin board or on a steel worktop deflects the impact, damages the edge and increases the risk of rebound.

How do you avoid rebound?

With a decisive blow from the elbow, perpendicular to the piece and with the edge in good condition. Rebounds occur when the blow is hesitant or when the blade no longer goes in, and they are the main cause of accidents with this tool.

What does the red handle mean?

It helps identify the tool and assign it to an area or type of product. In establishments that apply a colour code in their hygiene plan, having the cleaver in the right colour prevents it from being used where it should not.

Does it need frequent sharpening?

Not as much as a cutting knife, but it does need periodic honing with a robust angle. An edge that is too fine chips at the first blow; what you want is for it to go cleanly into the bone without splintering it more than necessary.
