Description

The DICK SM-111 knife sharpener is a professional high-output machine for sharpening and grinding: magnetic holding of the knife, a preset and adjustable angle, water cooling during sharpening and honing discs that remove the burr.

What it is used for

Once sharpening stops being a weekly job and becomes part of the daily routine, hand work is no longer enough: what you need is repeatability and speed. This machine gives both, because the magnet fixes the blade and the angle is already defined, so the result does not depend on who happens to be sharpening that day.

  • Meat processing: daily rotation of line knives.
  • Cutting rooms: replacing edges for several stations.
  • Abattoirs and handling centres: high, continuous volume.
  • Sharpening workshops: third-party service with a consistent finish.
  • Institutional catering: centralised maintenance of kitchen knives.

Less metal removed, and what that is worth over a year

There is an economic detail that tends to get overlooked. Every sharpening consumes material from the blade, and a professional knife has a finite number of sharpenings in it before it becomes unusable. A system that takes off only the metal it needs to, and does not punish the steel with heat, directly extends the working life of the knife.

In an establishment with twenty or thirty blades in rotation, that shows up in the annual knife bill rather than in any single sharpening. It is the reason a high-output machine can pay for itself twice: once in operator time, and again in knives that are replaced every other year instead of every year.

As machinery it falls, with its declaration of conformity and manual.

Frequently asked questions

How does it differ from the SM110?

Both share the same high-output approach, magnets, adjustable angle, water cooling and honing discs, and the same 100 W motor. They are adjacent models in one range; the choice comes down to configuration and intended use, and we can advise on your particular case.

How long does it take to sharpen a knife?

Very little, which is the whole point of a high-output machine. Real time depends on the state of the blade: a maintenance pass is a matter of seconds, while recovering a chipped edge takes several more.

Can the angle be set for each type of knife?

Yes. The angle comes set from the factory but is adjustable. The usual practice is to define one or two settings for the knife families in the establishment and always work with those, so each blade’s profile stays stable over time.

What maintenance does the machine need?

Cleaning the sharpening debris, checking the water circuit, and replacing the abrasive and honing elements when they lose effectiveness. It is little work, but skipping it is paid for in edge quality and in unnecessary wear on the blades.

Where should it be installed?

In a fixed position, with access to water and away from the food handling area, because it generates metal debris and moisture.
