Description
The DICK SM-110 knife sharpener is the high-output machine of the range: it holds the knife with magnets, keeps a preset and adjustable sharpening angle, and cools the blade with water throughout the process. Honing discs then remove the burr and leave the edge finished.
What it is used for
It is built for businesses that sharpen many knives, not a few: cutting rooms, meat processing and workshops that offer a sharpening service. The magnetic hold frees the operator’s hands and guarantees that every blade enters in the same position, which makes the result both repeatable and safe.
- Meat processing: sharpening the knives of an entire line.
- Cutting rooms: daily replacement of edges for several operators.
- Abattoirs: a high volume of knives in continuous rotation.
- Sharpening workshops: a professional service for third parties.
- Large kitchens and institutional catering: centralised edge maintenance.

Why water cooling extends the life of the knife
Sharpening dry, friction heats the edge. If that heat rises far enough, the steel loses its temper in exactly the thinnest part of the blade: the knife leaves the workshop sharp, and folds over a few hours into the shift. Cooling with water avoids that damage, which is why the machine produces a cut that lasts longer and a blade that survives more sharpenings over its life.
As machinery it falls, with its declaration of conformity and instruction manual.

Frequently asked questions
What do the magnets add?
They hold the blade in a fixed position through the whole pass, so the angle does not depend on the operator’s hand. The result is a sharpening that is uniform along the blade and repeatable between knives, and safer, because hands are not over the edge.
What sharpening angle is right?
It depends on use: a more closed angle cuts better but is more fragile, a more open one stands up to hard work. Butchery looks for a compromise. Being adjustable, the SM-110 lets you set it to the type of knife and the real work of the establishment.
Why does removing the burr matter so much?
Because the burr is a very fine thread of metal left after sharpening: it gives the impression of a very sharp knife, then folds over in the first minutes of use. The honing discs take it off, and that is why the resulting edge genuinely lasts.
How much output does it take?
It is designed to sharpen in series, with magnetic holding and cooling precisely so knives can be run one after another without the process degrading the steel. It is the right choice once sharpening stops being an occasional job and becomes a daily routine.
Does it need special installation?
It runs on 220-240 V with a 100 W motor, so electrically it plugs into a normal socket. What does need planning is the water point for the cooling and a location where the water and sharpening debris will not affect the food handling area.
