Description

This self-sharpening stainless steel blade is the replacement part for size 12 mincers, the smallest format in the Enterprise range. It works as a pair with the plate: the blade turns against it, and it is the contact between the two that cuts the meat.

What it is used for

A mincer does not mince by pushing, it cuts. The worm screw pushes the meat against the blade and plate assembly, and it is the edges of the blade sliding over the holes of the plate that make the cut. When that contact is lost, through wear or slack, the machine stops cutting and starts crushing: the meat comes out pasty, warms up and loses juice.

  • Butchery: daily counter mincing on size 12 machines.
  • Catering: mincing small quantities for preparations.
  • Small preparation rooms: occasional production of mince and prepared products.
  • Delicatessen: preparations needing fine mincing in small volumes.

What the size number actually means

The size number, 12, 22, 32, 114 and so on, identifies the size of the mincer’s cutting assembly and with it the machine’s output capacity. Size 12 is the smallest in professional use: it corresponds to compact counter mincers, suited to mincing on demand in front of the customer or to small quantities in a kitchen. As the number rises, so does the diameter of the plate, and with it the kilos per hour the machine can move.

The important point is that sizes are not interchangeable: a size 12 blade will not fit a size 22 mincer, or the other way round. Blade and plate must be the same number and, beyond that, must work as a matched pair.

As a part in direct contact with food, the blade falls under Regulation (EC) No 1935/2004 on materials intended to come into contact with food. Stainless steel is the reference material for these parts precisely because of what Regulation (EC) No 852/2004 requires: smooth, non-absorbent, corrosion-resistant surfaces that allow effective cleaning and disinfection.

Frequently asked questions

What does self-sharpening mean?

That the friction between blade and plate maintains the cutting edges through much of their working life, provided both parts are properly tightened and matched. It does not mean it never wears: there comes a point when it has to be replaced.

Should the blade and plate be changed together?

That is the recommendation. The two parts wear together and bed into each other; fitting a new blade against a worn plate leaves gaps where meat passes through uncut, and the result is pasty mince.

How do I know it needs changing?

By the result: the meat comes out crushed rather than cut, the machine jams more, takes longer, and the product comes out warm. If tightening the ring does not make the problem go away, the cutting assembly is finished.

Does it fit any size 12 mincer?

Size 12 is an Enterprise standard, but it is worth confirming the machine model before ordering, because there are variants in the drive system. Tell us your mincer and we will check.

How is it cleaned?

By dismantling the assembly after each use and washing each part separately. It should be dried thoroughly before reassembly: moisture trapped between blade and plate is the usual cause of corrosion in these parts.
