Description
The DICK RS-75 knife sharpener sharpens with diamond discs and calls for no particular skill: you draw the knife through the guide and the machine holds the angle. It is a robust electric sharpener, built for butchers, catering and small factories that want their knives permanently ready.
What it is used for
Sharpening by hand on a stone takes craft and, above all, consistency. The real problem in a preparation room is not that nobody knows how to sharpen, it is that nobody has the time. A guided sharpener solves that, because the machine fixes the angle and anyone on the team can bring a knife back in seconds.
- Butchery: daily touching up of boning and butcher knives.
- Catering: keeping kitchen edges maintained without spending chef time.
- Small food producers: room and line knives always serviceable.
- Fishmongers: fine edges that dull quickly on bone and skin.
- Preparation rooms and delicatessens: portioning and filleting knives.

Diamond discs: why the result is the same whoever sharpens
Diamond is harder than the steel of the blade, so it cuts metal cleanly and consistently, without loading up or losing bite the way a conventional stone does. That is the whole point: the result is repeatable even when the person doing the sharpening changes from one shift to the next.
It matters more than it sounds in a food business, because an edge is not only a productivity question. A damaged edge tears rather than cuts, which increases the exposed surface of the product and makes the blade itself harder to clean properly.
A periodic sharpening schedule, with its record, sits neatly inside that framework, and a machine that gives the same edge every time is what makes such a schedule realistic rather than aspirational.

Frequently asked questions
How often does a knife need sharpening?
It depends on use, but the practical rule in a butchery is to touch up daily with a steel and to sharpen on the machine when the steel stops bringing the edge back. Waiting until the knife will not cut is too late: you then have to remove a lot of material and the blade loses working life.
What is the difference between sharpening and honing?
Sharpening removes metal and rebuilds the edge; honing only realigns the very fine edge that has folded over in use, which is what a sharpening steel does. A well-maintained knife is honed many times and sharpened few.
Does it work on any knife?
It is made for professional knives with a plain blade. Serrated and honeycomb blades, and knives with a very unusual profile, need different treatment. If you are unsure about a particular reference, we can check it beforehand.
Who is responsible for keeping it in good condition?
The employer, which requires equipment to be kept in proper condition throughout its life and workers to be trained and informed about using it safely.
Can any employee use it?
That is exactly its purpose: the machine fixes the angle, so no sharpener’s skill is needed. Even so, it is worth giving an initial explanation of use, which is also what the training requirement above asks for.
