Description
The DICK SM-100 knife sharpener works with an abrasive belt instead of discs: it grinds and polishes every kind of knife, both bullet-shaped (convex) and V-shaped edges, and lets you sharpen and polish the whole blade right up to the handle. A sanding band and a polisher are included.
What it is used for
A belt is more versatile than a disc because it follows the profile of the blade. That makes it the right choice where one establishment runs knives of different geometries, boning, butcher, ham, and does not want a separate machine for each type of edge. The adjustable support and the wedge and convex working zones let you choose the finish.
- Butchery and delicatessen: a mixed set of knives with different edges.
- Cutting rooms: recovering heavily worked blades.
- Catering: kitchens with chef, santoku and boning knives.
- Sharpening workshops: a sharpening service for third parties.
- Food production: a central edge maintenance station.

Wedge, convex, and the geometry of an edge
The difference between the two edge types is one of profile. A V edge is a straight bevel: it cuts very well and is easy to rebuild, but it is more fragile. A bullet-shaped edge, the convex one, has a rounded profile, stands up better to work against bone and loses its fine edge more slowly, at the cost of asking more craft of whoever sharpens it.
That the SM-100 accepts both is precisely what makes it useful in a business with mixed knives: the boning knife can keep its convex profile for bone work while the chef’s knife gets the incisive V, on one machine, with the working zone chosen rather than imposed.
As machinery, it falls, with its CE marking, declaration of conformity and instruction manual.

Frequently asked questions
What is the advantage of a belt over a disc?
It follows the profile of the blade, so it handles both straight and convex edges and reaches all the way to the handle. A disc imposes its own geometry; a belt accommodates the knife’s, which works out better when the knives are varied.
What do wedge and convex sharpening mean?
The wedge is the straight V bevel, which gives a very incisive cut. Convex is the rounded profile, more durable in hard work. The SM-100 has specific zones for each, so every knife gets the profile that suits it.
Can it draw the temper out of an edge?
If you work with a worn band or dwell too long on one spot, the heat can affect the temper of the steel. The answer is to move the blade continuously and change the band when it loses bite, rather than compensating with pressure.
How often does the sanding band need changing?
It depends on sharpening volume. The signal is clear: when the band stops removing material easily and the knife heats up more than usual, it is time. It is worth always keeping a spare on the premises.
What is the difference from the SM110?
The SM110 is aimed at high output, with magnetic holding of the knife, a preset and adjustable angle, water cooling and honing discs. The SM-100 is a belt machine and puts versatility of profiles ahead of sharpening volume.
