Description
The DICK SM-90 knife sharpener works with a 200 x 50 mm flap disc that grinds and polishes in the same operation. It sharpens and cools at the same time, is very easy to handle, and is aimed at the bullet-shaped cut, the convex profile that stands up best to hard work.
What it is used for
A flap disc is flexible: it follows the contour of the blade instead of imposing a rigid plane on it, and that is why it naturally produces the convex profile butchers call a bullet edge. It is the answer for anyone who wants that particular finish without depending on the sharpener’s hand.
- Butchery: knives working against bone and cartilage.
- Cutting rooms: edges that have to last a long shift without folding.
- Delicatessen and preparation rooms: quick maintenance between shifts.
- Catering: kitchen knives in intensive use.
- Small food producers: a simple, effective sharpening station.

Why the bullet edge lasts longer against bone
A V edge has a straight bevel that cuts with great incision but leaves a fine, fragile arris. The bullet edge, the convex one, has a rounded profile: there is more metal behind the very edge, so it takes a knock against bone better and takes far longer to fold over. In butchery it is the reference profile for precisely that reason.
The trade-off is honest: a convex edge is slightly less incisive on the first cut and asks more craft when sharpened by hand. A flap disc removes that second objection entirely, which is what makes this machine worth its place in a butchery rather than a kitchen.

Frequently asked questions
What is a flap disc?
A disc made up of abrasive flaps arranged radially. Being flexible, they follow the contour of the blade instead of grinding it flat, which produces the convex profile and also avoids hard marks in the steel.
Why does it matter that it sharpens and cools at once?
Because heat is the enemy of an edge: if the steel gets too hot during sharpening, it loses its temper in the thinnest zone and the knife folds over within hours. Cooling while sharpening keeps the blade’s properties intact.
Is it suitable for V-edged knives?
This machine is aimed specifically at the bullet-shaped cut. If your knives work with a straight V edge, or if both profiles are in use, the belt-type SM-100 offers separate zones for each kind of sharpening.
How often is the disc changed?
When it stops removing material easily and the knife starts heating more than usual. Forcing a worn disc by pressing the blade harder is counterproductive: you get less sharpening and more risk of damaging the steel.
Does it need prior training?
It is very simple to operate and needs no sharpener’s craft. Even so, an initial explanation of use for staff is worth giving, and is what the work equipment rules ask for in terms of information and training.
