Description

Vacuum pouches 120 x 400 mm are the narrowest and proportionally longest size in the range: just 12 cm wide by 40 cm long, in 90 micron gauge and packs of 100. They are made for slim, very long cured product – fuet, thin salami, long cured sausage – that no other size packs neatly.

What these pouches are used for

A slim salami inside a wide pouch shifts, ends up crooked and forces you to seal with the product badly placed. At 120 mm wide the piece loads snugly and stays straight, and the 400 mm length takes a cured sausage of nearly 35 cm whole, without folding it.

How the barrier works on cured product

The oxygen barrier is what slows the rancidity of fat, and in dry-cured sausage – which is fat and time – that shows more than anywhere else. The water vapour barrier does the complementary job: it stops the piece from carrying on losing moisture inside the pouch and drying out.

As a food contact material the pouch is subject to Regulation (EC) No 1935/2004 and to Regulation (EU) No 10/2011 on plastics and their migration limits. The declaration of compliance is worth filing alongside the documentation for the HACCP plan required by Regulation (EC) No 852/2004. Where the packed piece is sold to the final consumer, the label must carry the particulars set out in Regulation (EU) No 1169/2011, date of minimum durability and storage conditions among them.

Frequently asked questions

Will a whole fuet fit lengthways?

Yes, that is the main use. At 400 mm long there is room for a piece of around 35 cm and still clearance for the open end to lie comfortably across the sealing bar, which is where mistakes happen when the size is cut too fine.

Why choose such a narrow pouch?

Because surplus film turns into creases once the air is drawn out: poorer presentation and more material spent per piece. At 120 mm wide the film finishes tight around thin-calibre cured sausage, and the result looks considerably cleaner on the shelf.

Can I vacuum pack mould-ripened cured sausage?

Vacuum packing halts ripening by removing the oxygen, so the piece keeps the condition it had when packed. That is standard practice with finished fuet and salami. What does not work is packing pieces that still need to carry on curing.

What if my product is wider than 12 cm?

It will not load properly and the seal can fail through tension in the film. For larger calibres move up to the 150 x 300 mm or the 180 x 300 mm pouch, depending on the diameter and the length of the piece.

How much free space should I leave at the open end?

Always some. The sealing area must be clean and free of fat, and the product should not reach the edge. A couple of centimetres is enough, and ignoring it is one of the most common reasons a pack loses its vacuum overnight.
