The TSM 50-COMBI manual tray sealer is the only one in the range that combines four packaging methods in a single machine: skin, skin + gas, vacuum and modified atmosphere, as well as simple sealing. It accepts trays up to 325 x 260 mm, has a 60 m³/h vacuum pump and sensor-controlled gas injection.
Skin packaging is what makes the film mould itself to the product like a second skin, fixing it to the tray: the piece does not move in transport and is seen exactly as it is, without a domed film above it. It is the premium finish in fishmongers and butcher’s shops, and the COMBI offers it without giving up the conventional vacuum and gas modes.

The pack that comes out of this machine reaches the consumer as it is, so sealing is part of the HACCP plan controls required by Regulation (EC) 852/2004: product temperature at the time of packing, cleaning of the mould between batches and checking seal integrity.
Sensor-controlled gas injection allows work in modified atmosphere (MAP) with authorised food gases —nitrogen (E-941), carbon dioxide (E-290) and oxygen (E-948)— and also in skin + gas, which combines fixing the product with a protective atmosphere in the remaining space.
The tray and film are food contact materials: they must comply with Regulation (EC) 1935/2004 and Regulation (EU) 10/2011, with their declaration of conformity. Labelling of packs intended for the final consumer follows Regulation (EU) 1169/2011, with the best-before or use-by date among the mandatory particulars.
Trays, sealing film —which for skin must be specific to that process—, the gas cylinder and its regulator are ordered separately.
José Bernad, S.L. has been equipping fishmongers, butcher’s shops and processing kitchens from Albacete for almost 40 years. We are a team of 35 people with our own technical service and technicians on staff. Skin is the most demanding way to pack: film temperature, tray type and cycle must be properly adjusted or the result will not be as expected.
We offer commissioning, trials with your product and tray until the cycle is fine-tuned, programming of the different packaging modes and subsequent maintenance: pump oil, heating elements and seals, as a service.
The film is heated until it softens and, with the help of vacuum, moulds itself over the product and seals it against the tray. The result is a kind of transparent second skin that holds the piece in place. It is used mainly for fish and meat cuts, where it prevents the product from moving and releasing liquid.
The TSM-50 works with vacuum, modified atmosphere or simple sealing. The COMBI adds skin and skin + gas modes and has a larger pump, 60 m³/h compared with the 21 m³/h of the base model. If you are not going to use skin, the TSM-50 covers the other needs.
Yes, that is precisely its purpose: it is the only machine that allows packing with skin, skin + gas, vacuum, modified atmosphere or sealing only. What changes between modes is the film and the cycle, not the machine, so several products can be packed on the same day.
No. Skin packaging requires a specific film, able to deform with heat and adhere to the product; conventional sealing film does not give that result. In addition, film and tray must be compatible with each other for the seal to be airtight.
Up to 325 x 260 mm outer tray dimensions, covering everything from single portions to family trays. Each specific format needs its corresponding mould, which is defined when configuring the machine.
Because the skin cycle requires air to be extracted quickly while the film is at the right temperature. A small pump would lengthen that phase and the film would lose its optimum point. The 60 m³/h is what allows the skin process to work with the expected quality.
