Description
Mainca CM-41S 40-litre bowl cutter with variable speed
The CM-41S is the upgraded version of the CM-41: the same 40-litre bowl (± 25 kg) and base, but with the knife motor driven by a frequency inverter. Cutting speed is adjusted continuously between 1,000 and 3,600 rpm to fine-tune each recipe.
Besides cutting, it offers two reversible mixing speeds, 80 and 150 rpm, which turn the knives forwards or backwards to mix without cutting the product. The bowl turns at 10 or 20 rpm.
Advantages
- 12.5 HP (9.19 kW) variable-speed knife motor.
- Head for 3 or 6 knives; supplied with 3.
- Clean cut and homogeneous batter, with high absorption capacity in emulsions. Suitable for frozen meat.
- Safety: the knives brake when the lid is lifted, emergency stop button and thermally protected motors.
- Switch for emptying and washing the bowl, digital thermometer and AISI 304 stainless steel construction. Base footprint 900 × 640 mm, net weight 330 kg.
