The FILUX sharpener sharpens knives and scissors in seconds with no prior experience: it works both sides of the edge at once with double-lip CBN wheels, does not overheat the steel and requires no learning curve. Made in Spain, with metal housing and stainless steel, and CE certification of conformity.
It is the only one in the range that also sharpens scissors, solving an everyday problem in fishmongers, bakeries and kitchens, where scissors are used daily and nobody quite knows where to sharpen them. And by working both sides of the bevel simultaneously, it ensures symmetry without depending on the steadiness of the user’s hand.

CBN (cubic boron nitride) is an extremely hard abrasive, second only to diamond, but with a specific advantage over it when working steel: it does not react chemically with iron at high temperature, so it cuts the metal cleanly and keeps its geometry for a long time. In a sharpener this translates into two practical things: a consistent finish throughout the life of the wheel and less heat transmitted to the blade.
The CE marking declared by the manufacturer corresponds to the Machinery Directive 2006/42/EC, which requires a declaration of conformity and an instruction manual. For its part, Spanish Royal Decree 1215/1997 places on the employer the obligation to maintain the equipment and to inform and train the operator on its use, even when the machine is as simple as this one.
Its design is geared to minimal maintenance, without frequently replaced consumables.
José Bernad, S.L. has been equipping professional kitchens, shops and bakeries from Albacete for almost 40 years. We are a team of 35 people with our own technical service, with technicians on staff. We supply both sharpeners and the professional cutlery they will maintain.
We offer, as a service, instruction on its use for the establishment’s staff and subsequent handling of any incident by our technical service.
Yes, it is designed for knives and scissors, which sets it apart from the rest of the range. Kitchen and fishmonger scissors go blunt quickly and are almost never maintained, precisely because most sharpeners only accept knives.
That both faces of the bevel are worked in the same pass. This saves time and, above all, ensures symmetry: if one side is sharpened first and then the other, the edge can easily end up off-centre and the cut will veer.
That is its whole approach: there is no learning curve and the knife is ready in less than a minute. Even so, it is advisable to give staff an initial explanation of use, which is also what Royal Decree 1215/1997 requires.
The manufacturer states that there is no overheating during the process, which is the critical point: excessive heat ruins the temper of the edge and makes the knife bend within a few hours. The CBN wheels help precisely to keep the cut cool.
It runs quietly and without vibration, something to bear in mind in kitchens open to the public or in bakeries where the machine is close to the workstation. It is a noticeable difference compared with conventional grinding-wheel sharpeners.
